Wash and bake sweet potatoes 'til cooked fully through.
Once sweet potatoes have cooled, remove skins.
Mix together sweet potatoes, eggs, flour, butter, evaporated milk, sugar, and nutmeg. Whip with mixer until mixture is light and fluffy.
Pour into prepared pie crust/s and bake at 350° for about 1 hour, or until firm.
Serve with whipped topping and enjoy!
