Sweet Potato Pie

  • 4 large sweet potatoes
  • 4 large eggs
  • 1 tablespoons flour
  • 1/2 pound butter
  • 1 can evaporated milk
  • 2 cups sugar
  • Nutmeg to taste
  • Single pie crust


  1. Wash and bake sweet potatoes 'til cooked fully through.
  2. Once sweet potatoes have cooled, remove skins.
  3. Mix together sweet potatoes, eggs, flour, butter, evaporated milk, sugar, and nutmeg. Whip with mixer until mixture is light and fluffy.
  4. Pour into prepared pie crust/s and bake at 350° for about 1 hour, or until firm.
  5. Serve with whipped topping and enjoy!
