Why You’ll Love This Breakfast Casserole with Texas Toast

Here are a few reasons to love this easy Texas toast breakfast bake…

  • Down to earth ingredients – You’ll make it with ingredients you probably already have in your pantry or fridge, and it’s packed full of flavor from said ingredients. No fancy seasonings, no fancy additions… Just good home cookin’ at its best!
  • It feeds a crowd. That’s why it’s especially good during the holidays, especially Christmas. This Texas toast egg and cheese casserole is hearty and goes a long way feeding a large group of people; it’s even great for a potluck breakfast or brunch.
  • This eggs and sausage bake makes a delicious breakfast-for-dinner, especially served with fresh fruit on the side.
  • While I like to treat it as an overnight Texas toast breakfast casserole, because it gives everything time to soak in and “marinate,” you can always just bake it fresh first thing in the morning. So, you have the option to make it ahead or make it right when you need it. It’ll be delicious either way.
  • You can customize it any way you like… I like to use both sausage and bacon. You can go totally meatless; or add ham. Add peppers and onions. Throw on extra cheese. You can make it however you like.

Ingredients and Substitutions Notes

Gather your ingredients. Here’s what you’ll need to make this Texas toast egg bake.

  • Texas Toast Bread Texas toast is thick bread you can either buy in the store or make homemade. For the best breakfast bake, use day old or slightly stale/dry bread; this will help the eggs to really soak into the bread, but it won’t be soggy like it will with fresh soft bread. If you’re gluten-free, you can make this with gluten-free bread; it just won’t be quite as thick as regular Texas toast. Another thought is to buy the frozen Texas toast available at most grocery stores. Now this will have butter and garlic on it… But I bet it’d make a delicious breakfast casserole, even with all that garlic-y flavor.
  • Large Eggs
  • Breakfast Sausage You can even use maple sausage.
  • Bacon
  • Whole Milk
  • Sea Salt
  • Ground Black Pepper
  • Sharp Cheddar Cheese – We like to use extra sharp cheddar. You can also use vegan cheddar.
  • Green Onions More for garnish than anything, but they do add flavor, as well.

Expert Tips and Recipe FAQs

Can I use regular sandwich bread instead of Texas toast?

Yes, of course, regular white bread, butter bread, wheat bread, sourdough bread, French bread, etc., will work just as well. It just won’t be as thick as Texas toast.

How do I keep it from getting soggy?

Use day or days old bread… Even slightly stale bread. Fresh bread will be softer, thus soggier in texture.

Can I make this breakfast casserole ahead of time?

Yes, you can. You can make it the day before. However, if you don’t want to make it ahead, you don’t have to. Making ahead may lead to a more flavorful casserole, though.

Can I freeze Texas toast breakfast casserole?

Yes, you can. Just make sure it’s stored in an airtight container or covered well with both plastic wrap and aluminum foil before freezing, to ensure it doesn’t get freezer burn. It should keep in the freezer for about 3 months.

How do I store Texas toast breakfast bake?

Store it covered, or in an airtight container, in the fridge for 3-4 days. You can re-heat in the microwave or oven.
