Ingredients & Substitutions Notes
- Broccoli – Fresh, steamed broccoli will give this recipe the best flavor and texture. You can also use frozen broccoli, but it will need to be thawed and drained thoroughly, or else it can make your casserole watery.
- White Rice – Any long-grain white rice is perfect for this recipe. You can also use brown rice or even quinoa if you prefer. If you are looking for a lower-carb option, try cauliflower rice.
- Spices – For spices, you’ll need garlic powder, ground black pepper and smoked paprika.
- Cream of Chicken Soup – You’ll need a can of cream of chicken soup to make this dish. If you’re feeling adventurous, you can make homemade cream of chicken soup with chicken stock.
- Cheez Whiz – Cheez Whiz works so good because it melts evenly into the casserole without separating or making it grainy. Not to mention, it adds moisture and extra creaminess. Velveeta makes a good substitute.
- Ritz Crackers – Ritz crackers make a perfectly buttery, crispy topping, but you can substitute with other buttery crackers, like club crackers. You can also use panko breadcrumbs, crushed cornflakes, or even crushed up potato chips.

Before getting started, pre-heat the oven to 350° F. Then grease or butter a 9×13 baking dish and set aside.

- In a large skillet over low to medium heat, melt the butter. Add the minced onion and chopped celery to the melted butter, and sauté for 5-6 minutes ’til softened.
- During the last minute, stir in the garlic powder, black pepper, and paprika. Then remove the mixture from the heat.

Assemble the Casserole
- In a large bowl, combine the cream of chicken soup with the Cheez Whiz.
- Stir in the onion and celery mixture.
- Fold the rice and broccoli into the cheese mixture ’til everything is coated well.

Expert Tips and Recipe FAQ’s
Yes, this is a great recipe to make ahead of time. You can assemble the casserole (excluding the Ritz cracker topping), cover it with cling wrap, and store it in the fridge for up to 24 hours before baking.
Watery broccoli cheese rice casserole is usually caused by under-drained broccoli. After you steam it, make sure to drain it really well through a strainer. You can even dump it out onto a layer of paper towels and pat it dry. This is even more important when you use broccoli that’s been thawed from frozen.
Yes, you can freeze broccoli and cheese rice casserole either unbaked or fully baked, without the cracker topping. Covered with a layer of plastic wrap and then a layer of aluminum foil, it will keep in the freezer for up to 3 months. When you’re ready to eat it, let it thaw out in the fridge overnight, add the cracker topping and bake or reheat.
Store your leftovers in an airtight container for up to 3-4 days. You can reheat the casserole at 350ºF to re-crisp the topping, or you can pulse it on high in the microwave for individual portions.
