Before getting started, preheat your oven to 350ºF. Then line a cookie sheet with parchment paper or one of these reusable silicone baking mats.

The best way to do this is to mix up your cookie dough, cover it with plastic wrap, and let it chill in the refrigerator for up to 2-3 days before dropping and baking your cookies.
