This classic Waldorf salad recipe is my take on an old-fashioned favorite, and it makes a great holiday or potluck side dish. Creamy, refreshing, and just sweet enough, it combines crisp apples, juicy grapes, celery, and crunchy walnuts with a light, fluffy mayonnaise and whipped cream dressing. It’s an easy, no-cook apple walnut salad that takes just 30 minutes of prep.

Waldorf salad is named after the Waldorf-Astoria hotel in New York City, where it was first created way back in the 1890s. Traditionally chilled for an hour or two, then served on a bed of lettuce, this old fashioned Waldorf salad is a modern-day Thanksgiving and Christmas staple. It’s also light and refreshing enough to take on a spring picnic!

    • Heavy Cream – For the whipped cream.
    • Mayonnaise – Adds a little tang to balance out the sweet. You can substitute plain Greek yogurt or sour cream in place of the mayo, though the dressing will be a bit tangier.
    • Lemon Juice – Helps keep the apples from browning.
    • Sugar – Just a touch to bring out the natural sweetness in the fruit.
    • Celery – Mince it finely for a firm, juicy crunch and a mild flavor to cut through that rich, tangy dressing.
    • Red Grapes – Halve the grapes. You can use green, but they’ll be slightly more sour and not quite as colorful.
    • Walnuts – Add chopped walnuts for a little crunch. You can also use chopped pecans or even sliced almonds.
    • Apples – Diced apples are the main ingredient. Look for firm, crisp varieties that aren’t as prone to getting soft and mealy. I like Honeycrisp, Granny Smith, Gala, Fuji, and Pink Lady. Leave the peel on for extra color and crispiness. You can also mix red and green apple varieties for a balance of sweet and tart, plus some color contrast.

    How to Make Classic Waldorf Salad Recipe

    Before getting started, grab a chef’s knife and cutting board. Wash and pat the celery, grapes, and apples dry. Then mince the celery, halve the grapes, and chop up the walnuts if they aren’t already chopped. Dice the apples last, leaving the peel on, to help keep them from browning.

    Make the Waldorf Salad Dressing (Whipped Cream & Mayo)

    The whipped cream dressing is similar to my old-fashioned fruit salad dressing, with a little mayo added for extra tanginess.

    1. Whip the heavy cream in a small bowl with a hand mixer ’til it forms soft peaks, about 2-3 minutes.
    2. Mix together the mayo, lemon juice, sugar, salt, and pepper in a separate large bowl.
    3. Fold the whipped cream into the dressing ’til the mixture is smooth and fluffy.

    How to Make Waldorf Salad

    1. Fold the celery, grapes, walnuts, and apples into the dressing.
    2. Cover and chill for 1-2 hours, or overnight if possible.

    Serving Waldorf Salad

    Old fashioned Waldorf salad is served on a bed of lettuce leaves. My personal favorite way to eat it is with crackers and cheese. You can also serve it as a side dish all by itself, paired with ambrosia fruit salad!

    Soggy Waldorf salad is usually caused by excess moisture. Fruit that wasn’t patted dry after washing, fruit that’s past its prime and getting soft, or dressing mixed in more than 24 hours ahead (which can separate and turn watery) are the most common culprits. Pat everything dry, use fresh, firm fruit, and fold the dressing in 1-2 hours before serving.

    How far in advance can you make Waldorf salad?

    It’s best made a couple of hours ahead, or the night before, so it has time to chill. If you need to make it more than 24 hours ahead, keep the fruit and celery in one airtight container, the walnuts in another, and the dressing in a third, then fold everything together 1-2 hours before serving. To keep the apples from browning while they wait, toss them with an extra tablespoon of lemon juice. Stored separately, they’ll keep up to 2 days in the fridge.

    What’s the best way to transport Waldorf salad for a potluck?

    Waldorf salad should be stored in an airtight container. The best way to transport it is in an insulated cooler with ice packs. Just be sure not to let it sit out at room temperature for more than 2 hours (or 1 hour if it’s 90ºF or hotter).

    Can you freeze Waldorf salad?

    No, I don’t recommend freezing Waldorf salad. Both the mayo and the whipped cream will separate when thawed, and the salad will become mushy and watery.
