Pre-heat bacon grease in the skillet over low to medium heat. Also, pre-heat your oven to 350° F.
Shape the sausage into patties that are large enough to fit on the English muffins, so slightly larger than the muffins because the sausage patties will shrink while cooking. I like to make mine about 1/4 inch thick.
Fry the sausage patties 'til they're cooked thru and browned.
Once the sausage is removed from the skillet, fry the eggs 'til well done, using rounded egg rings.
Slice the English muffins in half, toast them in a toaster, and spread a thin layer of butter on each toasted muffin half.
Add a slice of American cheese to the bottom half of each muffin.
Place the English muffins on a baking sheet in your pre-heated oven, and allow the cheese to just slightly melt; it should only take about 1-2 minutes. Then remove them from the oven.
Assemble your breakfast sandwiches by starting with a sausage patty on top of the cheese.
Next add the fried egg.
Complete your sandwich with the muffin top, and serve it up while warm.
