Ingredients

  • 6 hard boiled eggs
  • 1 apple
  • 1 avocado
  • ½ small red onion
  • ½ cup pecans
  • 4-5 bread & butter pickles
  • 1/2 cup shredded Cheddar
  • ¼ cup pickle juice
  • ¼ cup mayo
  • Pita bread
  • Lettuce leaves

Instructions

  • Boil eggs and peel; crumble.
  • Wash, peel, and chop apple.
  • Wash, peel, and slice avocado
  • Mince onion.
  • Chop pecans and pickles.
  • Shred Cheddar cheese.
  • Mix together eggs, apple, avocado, red onion, pecans, pickles, Cheddar, pickle juice, and mayo in a medium-sized bowl.
  • Serve in pita bread pockets with lettuce. Enjoy!
