Potato Soup

• Bacon • Minced Yellow Onion • Minced Garlic • Salt • Ground Black Pepper • Potatoes, Peeled &  Chunked • Chicken Broth • Milk • Heavy Cream


Chop the bacon and cook using the sauté function in the Instant Pot.  Set the bacon aside,  but save the grease.

Sauté the minced onion, garlic, salt, and pepper in the Instant Pot for 3-5 minutes.

Add the potatoes and chicken broth to the Instant Pot. Pressure cook for 8 minutes, and let it naturally release.

Set to sauté; stir the milk and cream into the soup, whisking everything together.

Pro Tip!

Try mashing some of the potatoes to give the soup a slightly thicker consistency.

Dish up the soup and serve with the crumbled bacon, cheddar cheese, and green onions.
