Spring is a beautiful time of year, and Easter brings so many special memories to mind. Easter Basket Cupcakes are fun to make and so tasty too. This is definitely a kid-friendly recipe, meaning kids will enjoy both decorating and eating these scrumptious Easter treats. Made with my grandma’s lemon cake recipe, Peeps, jelly beans, and other spring candies, they’re a scrumptious Easter dessert.
Easter baskets totally take me back to the days of Easters spent at Grandma’s house. Every Easter Sunday, Grandma would fill all of her baskets up with candy. She had these square-shaped, plastic, green baskets, sorta like a wire basket but made from a somewhat flimsy plastic material. She’d carefully fill each one with Easter grass and then decoratively pack each basket with all the candy she’d picked out. She always made each one so special for all her grandkids. I remember there being chocolate marshmallow bunnies, chocolate bunnies, Cadbury Mini Eggs (still a favorite of mine to this day), malted milk eggs, Peeps, the sweetest little Easter shaped candies that had a taste similar to candy corn, and so much more. Her farm was beautiful, and she had flower beds and other little hiding places all over the place. She’d hide each basket, some harder to find for the older kids, others not so hard for the little kids.
After church on Sunday afternoon, all our families would arrive, carloads of grandkids ready to hunt Easter baskets. We were rarin’ to go, and we could hardly wait ’til lunch was over so we could have some fun. I think Grandma had more fun just watching all of us. It was just a really special time of year that we all got together, and I really miss those days.
